TAMARIND CONCENTRATE

Tamarind concentrate is a thick, dark paste derived from the pulp of the tamarind fruit, offering a unique, tangy-sour flavor with a hint of sweetness. It's used to add depth and complexity to both sweet and savory dishes, and is known for its convenience as it's ready to use.

Tangy Tamarind Glazed Chicken Wings

These wings offer a perfect balance of sweet, sour, and spicy, creating a sticky, caramelized glaze that is irresistible.

Ingredients

  • 1.5 lbs chicken wings

  • 1 tbsp oil

  • 1/2 cup Real Hanif's Tamarind Concentrate

  • 1/4 cup brown sugar

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1-2 cloves minced garlic

  • 1 tsp grated ginger

  • 1/2 tsp chili flakes (or more for heat)

  • Salt and pepper to taste

Instructions

  1. Prepare the Wings: Preheat oven to 400°F (200°C). Pat the wings dry and season lightly with salt and pepper. Arrange them on a baking sheet lined with parchment paper for easy cleanup.

  2. Bake: Bake for 30 minutes, or until the wings are mostly cooked and the skin is starting to crisp.

  3. Make the Glaze: While the wings bake, whisk together the oil, tamarind concentrate, brown sugar, soy sauce, rice vinegar, minced garlic, grated ginger, and chili flakes in a small saucepan. Bring the mixture to a simmer over medium heat and cook for 3-5 minutes, stirring until the sugar is dissolved and the glaze has thickened slightly.

  4. Glaze and Finish: Remove the wings from the oven. Brush them liberally with the tamarind glaze. Return them to the oven for another 5-10 minutes, or until the glaze is sticky and caramelized. Serve immediately, garnished with sesame seeds or chopped cilantro if desired.
